Our Process
From Cultivation to Finished Product
Why We Choose Fruiting Bodies
The fruiting body is the part of the fungus most people recognize as a mushroom—the Lion’s Mane pom-pom, the fan-shaped Turkey Tail, the polished conks of Reishi, or the slender orange growth of Cordyceps.
Beneath the surface is mycelium, a network of fine fungal strands that supports the organism as it grows. Mycelium is an important part of the fungal life cycle, but not all mushroom products are made the same way.
Some mushroom powders are produced by growing mycelium on rice, oats, or another grain and then grinding the entire material together. The finished powder may therefore contain a substantial amount of the growing medium along with the mycelium.
At Appalachian Shroomery, we choose fruiting-body mushroom extracts without myceliated grain or grain-based fillers. This gives customers a mushroom product made from the part of the organism they expect to receive.
Mushroom Powder and Mushroom Extract Are Not the Same
Mushroom cell walls contain chitin, a naturally tough structural material that the human digestive system does not easily break down. Simply drying and grinding a mushroom creates mushroom powder, but it does not complete the extraction process.
Extraction uses water and heat to separate water-soluble compounds from the mushroom’s structural material. These include naturally occurring mushroom polysaccharides, such as beta-glucans.
This additional step requires more time and considerably more mushroom material, but it produces a concentrated extract powder rather than simply a ground dried mushroom.
Our Hot-Water Extraction Process
Our mushroom extracts are produced using hot water—the traditional method used to prepare functional mushrooms for generations.
The fruiting bodies are placed in water and held at a controlled temperature, allowing water-soluble compounds to move from the mushroom material into the liquid. The mushroom solids are then separated from the extracted liquid.
We do not use alcohol in this process. Our approach is intentionally straightforward: fruiting-body mushrooms, water, heat and time.
Slowly Concentrated
After extraction, the liquid contains both water and the soluble material released from the mushrooms. Rather than sending a large volume of diluted liquid directly into the freeze dryer, we gently reduce it to approximately half its original volume.
This concentrates the extract before drying while also making the freeze-drying process more efficient. It is not the fastest step, but small-batch production gives us the freedom to take the time the process requires.
Freeze-Dried Into Extract Powder
The concentrated mushroom liquid is then frozen and placed in our freeze dryer.
Freeze-drying removes moisture under vacuum at low temperatures. As the frozen water leaves the extract, the concentrated mushroom material remains behind as a lightweight, dry solid.
Once the cycle is complete, the extract is carefully collected and milled into a fine powder. This creates an ingredient that is easy to measure, blend and incorporate into coffee, cacao, smoothies, or other beverages.
Prepared in Small Batches
Working in small batches gives us greater control over each stage of the process. From preparing the mushrooms and monitoring the extraction to concentrating, freeze-drying, grinding and blending, every step receives hands-on attention.
Our individual mushroom extracts contain no grain fillers or unnecessary ingredients. Our coffee and beverage blends combine those fruiting-body extracts with thoughtfully selected functional ingredients chosen for flavor, texture and everyday use.
We believe customers deserve to understand what they are buying, how it was made and why those details matter.

From Our Farm to Your Daily Routine
Appalachian Shroomery began with growing mushrooms, learning how they behave and developing a genuine respect for the time and care the process requires.
That connection to the mushroom itself continues to guide every product we make. We are not interested in disguising inexpensive filler behind a mushroom name. Our goal is to create honest, approachable products that taste good, fit easily into everyday routines and give customers confidence in what is inside the package.
That is our process—and our promise to remain transparent about it.
